Baking Powder and Baking Soda Aren’t Interchangeable
Both powders may look the same and even start with the same word, but they have very different jobs in your kitchen. In contrast to what most people think, they are not interchangeable, and each is used to trigger a specific reaction in your baking. If you use baking soda instead of baking powder in your recipes or vice versa, you will end up with a ruined mess.
Both are very affordable, so make sure that you stock your pantry with plenty of each. Also, it’s a good idea to clearly label them to prevent accidents when tossing together a recipe in a hurry. Both baking soda and baking powder have long shelf lives, just make sure they are properly sealed.
