Improperly Sized Eggs
We’ve already said the smallest things matter in baking, and the same goes for the size of your eggs. While the different sizes of eggs may not matter for your breakfast scramble, the size will have a dramatic effect on your baked dish. If your recipe calls for a specific-sized egg, then make sure that’s what you use if you don’t want your dish to fail.

The best bet is to make a point of stocking large eggs when you plan to go on a baking binge. Oftentimes, too much egg won’t have as much of an effect as too little egg in your recipe. Of course, if your recipe calls for small eggs, that is exactly what you should use.
