Using Excess Grease on The Pan
Making cookies often comes down to a process of trial and error. Depending on what type of cookie you’re baking, using grease may be one of your mistakes. Check your recipe to see if it calls for greasing the pan prior to baking or not. Those that don’t won’t have anything listed, so skip it unless stated.
Butter or grease is used on the cookie pan to help the cookie flatten out. Some cookies, such as chocolate chips, already contain enough oil or butter and don’t need the extra help. Sugar cookies and other dry dough types can benefit from a layer of butter, cooking spray, or even parchment paper.
