Letting Pastries Cool in the Pan
We know we told you to leave cakes alone while they are still hot, but the same is not true for pastries. A big mistake many home bakers make is leaving their pastries on the cooking surface to cool. They will actually keep cooking since the pan or the surface is still hot, and that will lead to a less than perfect treat.

Just about every type of baked good, with exception of brownies and cakes, should be removed from the pan to cool. Some baked items will actually get soggy if you leave them in the pan to cool and eventually sweat. Avoid the drama and place them on a cooling rack instead.
