#25: Don’t Forget to Rest Your Dough
As you can see from most of the mistakes so far, ignoring the recipe is literally a recipe for disaster. Some dishes are harder to prepare than others, but, they are also much tastier. When it comes to dough, the most common mistake is not letting it rest.

With both savory and sweet dishes, resting the dough for a specific amount of time is critical for success. If you let it rest too long you will end up with a dough that is too fluffy for your needs, and if you don’t let it rest enough then you will end up with a dense dough that also doesn’t meet your needs.
