Grilling is just one part of cooking, but it has some particular rules that can apply to all types of meal preparation. Spending 14 hours smoking a brisket can create a jaw-dropping hunk of tender meat, but it can ruin within five minutes if you don’t let it rest.
Rest your brisket at least 20-30 minutes after you’ve taken it out of the smoker. I know, I know, it smells good, it looks fantastic, and your mouth is watering, but I promise that a little bit of extra time will assure you’ve made the best brisket possible. You’ve already waited 14 hours; what’s another 30 minutes?
