Yes, again with the temperature. I can’t even count the number of meals I’ve ruined because I didn’t have my pan or oven at the right temperature from the beginning. As previously mentioned, the temperature is one of the most critical aspects of successful cooking.
Some foods, like potatoes, need to start in cold water and come up to temperature as the water boils, while other foods, like pasta, need to be cooked in boiling water from the beginning, so they don’t get gummy. Same for your oven. If you’re roasting veggies, a high beginning temperature is imperative, so they don’t steam too much before they properly roast!
