#35: Live for the sizzle
Searing meat keeps it tender and juicy while also keeping it from sticking to your pan. To get a good sear, start the pan at a high temperature and add your oil. Once the oil shimmers (and before it starts smoking), throw your seasoned meat in and listen to that satisfying “kkssssssss” sound!

After searing, reduce the heat! Remember, you want the meat to cook all the way through without burning on the outside. We’ve mentioned that dial a few times now, and this is when you’ll need it most! You can also cover the pan to keep the heat even inside!
