Pressing on meat pushes the juices out

One of the most rookie mistakes that a home cook (and even some pro burger joints) can make is pressing on meat. While the meat is grilling, you should leave it entirely alone. If you press on it with a spatula, it will produce a satisfying sizzle as the inner meat juices the hot pan or grill grates. However, this is not what you want!

All of that liquid goodness that sizzles on the pan is the juices that would have otherwise made your burger a lot more moist. So, next time you have a craving for burgers, toss the patty on a hot pan and let it cook on its own.
