Making dishes that are too spicy
This is subjective. Some people can’t get enough spiciness while others can’t handle an extra dash of pepper. Use as much chili as you like. Go crazy if you want. However, if you find your dish to be too spicy, you don’t have to toss the entire thing in the garbage bin.
Instead, to salvage your dish, consider drizzling some lime or lemon juice on top. Some sweet soy sauce can also counteract the spiciness of whole peppers. Also, consider keeping a glass (or a gallon) of milk on hand. The scientific explanation is that milk neutralizes capsaicin, the oil in chilies that give them their spice.
