Using high heat to scramble eggs
Cooking scrambled eggs might seem like a no-brainer, but there’s a lot of thought and care that goes into making the perfect scramble. It all starts with the type of pan you use. A nonstick pan is ideal as it doesn’t retain heat as well as stainless steel or cast-iron. That said, you’ll also need to play with the stove’s dial throughout the cooking process.
First, make sure the pan is searing hot. After pouring in the eggs, bring the heat all the way down to low and continuously move the eggs until the edges solidify. You can raise the temperature slightly as you cook, but remove the eggs before they’ve set completely in the pan. It’ll continue to cook as you plate them.
