Grilling, baking, frying wet meat
One of the best things about steak is the crispy exterior. You can only achieve true crispy perfection by searing the meat before finishing it in the oven. To do so, put some oil in the pan and toss the steak around until the entire surface is evenly brown.
Before doing this, pat the steak dry with a paper towel. Searing wet meat will increase the moisture content in the pan, which will then slowly boil the steak. This will cause an unappealing gray layer that tastes good but is absolutely free of crispiness. After searing your meat, pour the juices back on top of the steak before sticking it in the oven.
