Polenta
We’re going to be completely honest with you guys. We’re not fans of polenta, and it’s not because we haven’t eaten the “good stuff.” There’s something about its mushy consistency that’s a put-off, but that’s just us. If you want microwaved polenta, here’s how it’s done.
Mix one cup of water with ¼ of a cup of cornmeal inside a microwave-safe bowl. Add one teaspoon of olive oil and a generous pinch of salt. Mix the ingredients until they’re fully incorporated before nuking the bowl for five minutes. At the halfway mark, add enough milk until it’s the perfect consistency (optional). The polenta should come out slightly thinner than you want. It will thicken as it cools.
