BBQ Chopped Chicken for Salads
First and foremost, you should never, ever, under any circumstance, microwave a salad. Salad needs to be moist and crisp to the bite, but if you toss it in the microwave, you’ll end up with a wilted, soggy, nasty mess. The BBQ chicken topping, however, will cook just fine in a microwave.
Take six ounces of pre-cooked chicken breasts (diced) and pour in two tablespoons of BBQ sauce. Microwave it for 45 seconds while you prepare your salad, which can consist of anything you want. For a more traditional-style salad, use black beans and corn for sweetness and body. After the chicken topping is done, pour it onto your salad, and you’re ready to eat.
