The best thing about nachos is that it theu be as messy as you want. Nachos aren’t some fancy-schmancy food that fat cats eat—it’s loaded with all sorts of sticky ingredients that would take a professional cleaning crew to clean up. Here’s how you make BBQ chicken nachos in your microwave.
If you have leftover rotisserie or roasted chicken, shred it up using two forks. Now, mix in some BBQ sauce until it’s as saucy as you want before adding anything else into the chicken mix. Spread a mountain of nacho chips on a plate and pour the chicken mix on top before adding two handfuls of grated cheese for one nacho chip on top of the plate. Microwave until the cheese is melted, and serve to your guests. Or it alone—your choice.
