Salmon
The best thing about salmon and other fatty cuts of fish, other than their high omega-3 fatty acid content, is that they cook super-quickly. If you don’t want to broil your salmon fillets because broiling is too much of a hassle, you can get the same flaky results by nuking the salmon in your microwave.
Place the fillets skin-side down on a microwavable plate. Sprinkle with enough salt and pepper to taste before covering with a microwave-safe plastic wrap (get a roll of this if you don’t already have one). Cook for 3-4 minutes before assessing the flakiness level of the fillet. If it’s not done yet, repeat the microwaving process at 30-second intervals.
