Brown Sugar Carrots
There’s nothing like a bit of sweetened vegetables to cut through the richness of a turkey or ham. Brown sugar carrots usually call for baking in an oven, which is a pain in the neck, especially if you’re preparing a feast for more than five people. That’s why you should use your microwave whenever you have the chance.
Peel your carrots, slice them into thin strips using a mandoline slicer, mix the carrots with butter, salt, cinnamon, brown sugar, and water, then microwave for 60 seconds. If the carrots aren’t fully cooked yet, microwave again at 30-second intervals. It’s a good idea to prepare slightly more carrots than you plan on serving, so you can taste-test the carrots every time the microwave dings.
