Pumpkin Pie
We’ll be honest with you and say that there’s no pumpkin pie that beats the baked stuff our grandmother makes every Thanksgiving. But this microwavable pumpkin pie recipe is a close second. Best of all, it only takes two minutes to whip up!
In a mug, add ½ a cup of pumpkin puree, one egg, and ¼ of a teaspoon of maple syrup, as well as one teaspoon of your favorite pumpkin pie spice (homemade or store-bought is fine). To make the crumble topping, add the following ingredients to another bowl and mix: one tablespoon of butter, one tablespoon of decimated coconut, and one tablespoon of almond flour. Cook the pumpkin mixture in the microwave for two minutes before adding the crumble on top, and serve.
