Chef Daniel Sheridan stumbled upon a property on the outskirts of Little Italy as he was scouting for a place to produce pickles for his rapidly growing venture, Wilmington Pickling Company. During this time, he also conceived the concept for a new business.

Sheridan joined forces with two locals, Mike Gallucio and Justin Mason, to combine pickles with barbecue. Their delightful range of barbecues is prepared over flavorful cherry wood. The menu features brisket, pig, bratwurst, chicken, ribs, and mouthwatering buns, available not only in North Carolina but also in Kansas City.
