#16: Temperature control!
This concept has made the list twice for a reason. Not only can you change the temperature for optimal cooking, but many stoves offer different burner sizes, too! If you’re cooking with a large pan, turning a small burner all the way up still won’t give you an even heating surface.

And again, you want your food cooked all the way through. Just because it has a gorgeous crust or finish doesn’t mean it’s ready to eat. Simmering sauces should also be done at low temperatures, and anything dairy-related can scorch quickly if the pan is too hot!
