Doubling for Trouble

Do you have a favorite recipe that you want to expand for a large group of people? Most bakers will double up the recipe which is where they run into trouble. You would think that doubling will result in twice the amount of the same thing, but often this leads to disaster.

Depending on the recipe, the best option is just to make the original recipe twice to prevent any mishaps. It may take you a bit longer, but it’s worth the trouble, as making it twice perfectly is always going to take less time than starting over after a bad doubled batch.
